Old gold in colour with silver glints, this wine is bright and limpid.
The open, very expressive nose has a beautiful complexity. Refreshing star anise notes blend with the more floral lime blossom and acacia. Finally, the minerality brings a lightness and reminds us of the land, with its scattered outcrops of white rock – the ‘roche blanche’ celebrated in the wine’s name.
The palate is full, rich and flattering. The flavours already discovered in the nose reappear adding to the harmonious finish. The sucrosité and wooded notes combine with the minerality already evident from the nose, to create a beautifully balanced whole.
The mature grapes used in this wine exemplify the rigorously managed, sustainable vineyards.
Keep for 1 to 2 years and drink with freshwater fish and lemony sauces. It won’t be overpowered by dishes with more dominant spices, like saffron.
